Spicy Shrimp and Sweet Potato Bowl

Ingredients:

  • 300g of shrimp
  • 200g of sweet potatoes
  • 100g of black beans
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Peel and dice the sweet potatoes into small cubes. Toss them in olive oil, paprika, garlic powder, salt, and pepper.
  • Spread the sweet potatoes on a baking sheet and roast in the oven for about 25 minutes, or until tender and slightly caramelized.
  • While the sweet potatoes are roasting, prepare the shrimp. Season the shrimp with salt, pepper, and a drizzle of olive oil.
  • Heat a non-stick skillet over medium heat and cook the shrimp for about 3-4 minutes on each side, or until they turn pink and opaque.
  • In a blender, add the cooked black beans with a little water to create a smooth bean puree. Season with salt and pepper as needed.
  • Once the sweet potatoes are done roasting, assemble the bowl: Start with a base of the black bean puree, add the roasted sweet potatoes, and top with the sautéed shrimp.
  • Garnish with fresh cilantro before serving.
