
Spicy Shrimp and Sweet Potato Bowl
Ingredients:
- 300g of shrimp
- 200g of sweet potatoes
- 100g of black beans
- 1 tablespoon of olive oil
- 1 teaspoon of paprika
- 1 teaspoon of garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish

Instructions:
- Preheat the oven to 200°C (400°F).
- Peel and dice the sweet potatoes into small cubes. Toss them in olive oil, paprika, garlic powder, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast in the oven for about 25 minutes, or until tender and slightly caramelized.
- While the sweet potatoes are roasting, prepare the shrimp. Season the shrimp with salt, pepper, and a drizzle of olive oil.
- Heat a non-stick skillet over medium heat and cook the shrimp for about 3-4 minutes on each side, or until they turn pink and opaque.
- In a blender, add the cooked black beans with a little water to create a smooth bean puree. Season with salt and pepper as needed.
- Once the sweet potatoes are done roasting, assemble the bowl: Start with a base of the black bean puree, add the roasted sweet potatoes, and top with the sautéed shrimp.
- Garnish with fresh cilantro before serving.
